[Recipe] Spaghetti Alfredo with Roast Chicken

For the 1st time ever, I'll share a recipe!


Looks simple? It is!
For those who know me, or doesn't know me at all -never mind... I'm an entry level in cooking skill (and experience). So, if you think you're similar with me, then the recipe will suits you! *smirk*

Well, deep in my heart I feel unconfident to call it a recipe. Didn't create it by myself,  I got inspiration from 2 recipes then combined them with imagination.. haha..


The 1st recipe as a "base" is Creamy Spinach Pasta, where I substituted spinach with broccoli and added capsicum to enrich the taste and colors. Second recipe I combined is Chicken with Lemon and Garlic which simplified into roast chicken only (without lemon and garlic), as I wanna use them as a topping for my pasta dish.

Dare to cook it? Ok, let's start...

Ingredients:
  • 200 grams pasta of your choice (usually spaghetti or fettucine)
  • 50 grams chicken breast fillet (or more, if you like)
  • 150 ml cooking cream
  • 3 cloves garlic, finely chopped 
  • 100 grams broccoli
  • 50 grams capsicum (could be more, or less, depends on you), thinly sliced
  • 2 tablespoons butter
  • Cooking oil (I use olive oil)
  • Dried oregano
  • Salt and pepper, to taste

Cooking Step-by-step:
  1. Cut chicken breast into strips, or as you wish. Marinate with salt, pepper, and dried oregano. Put in refrigerator for about 10-15 mins.
  2. Cook pasta in boiling water until al dente, or as you like. Drain and put aside.
  3. Blanch the broccoli and put aside.
  4. Saute chicken breast with small amount of cooking oil in medium heat until tender (and make sure it perfectly cooked). Put aside.
  5. Melt butter in a skillet, put chopped garlic and saute until fragrant. Add sliced capsicum and broccoli then stir for 1-2 mins. Reduce heat to low.
  6. Pour cooking cream and stir for a while. Add pasta and mix thoroughly. Sprinkle salt, pepper, and dried oregano to your liking.
  7. Remove the heat and serve with roast chicken. Enjoy!

Note: 
  • Add grated parmesan cheese for more taste (unfortunately I don't have one, stock was empty when I order online at nearest supermarket.. hiks..)
  • Add chilli flakes if you're a hot n' spicy lover. Please do not add chilli sauce!

Even tho' it's not too creamy as I wish, but for a 1st attempt.. I like it!
